I hope you all had a beautiful Easter weekend! I’m sorry it has been a while since my last post, I’ve been traveling for work as well as visiting my family back home.
Let’s talk granola… I know there are so many different types of granola out there. Many of the options out there are pretty bad for you and or relatively healthy and very expensive. This is a recipe that’s not only tasty, but relatively healthy.
Ready? Let’s get started!
- 1/4 C butter
- 1 C walnuts
- 1 C almonds
- 1/4 C brown sugar
- 1/4 C 100% maple syrup (not the fake junk, check the ingredients label)
- 1/2 teaspoon vanilla extract
- 2 1/2 C old fashioned rolled oats
- 1 C large coconut flakes
- 1/2 C sunflower seeds
- 1/2 C Craisins
1.) Preheat your oven to 325 degree F and line your baking sheet with parchment paper
2.) In a saucepan, melt the butter, add in the walnuts and almonds and mix together
3.) Add brown sugar and syrup and mix together until the nets are covered in a glaze. Add in the vanilla and coat.
4.) In a separate large bowl, combine the rest of the ingredients
5.) Place the glazed nuts in the mixing bowl, and toss the ingredients together until thoroughly mixed.
6.) Spread the mixture onto your baking sheet with the parchment paper, and press down with the back of a fork or spatula
7.) Bake for 15 minutes, pull out of the oven, flip over and mix around the ingredients using your spatula. Put back in the oven and bake for 10 more minutes. Let cool and enjoy!
My favorite way to enjoy the homemade granola is with a cup of vanilla greek yogurt, strawberries and raspberries. Yummy!
