This is a quick and easy meal to make any time of day for yourself or your family.

Embarque & Co’s Breakfast Tacos
Servings: 1 serving or 2 tacos
- 2 corn tortillas
- Olive oil (I used extra virgin)
- 1/2 C Veggie Mixture (chopped mushrooms, bell peppers and onions, but you can change the mixture to your liking)
- 2 Eggs
- 1 Avocado
- pinch of salt
- 2 strips of Turkey Bacon (optional)
1.) Grab your skillet, place it on the range and put it on medium low heat.
2.) Drizzle some olive oil in your plan, and throw on your tortillas in the pan and cook for about 3 minutes on each side
3.) Place your veggies in the microwave and cook for 1:45 (to neutralize the harsh taste)
4.) Place your tortillas on a paper towel and blot excess oil
5.) Throw your veggies in the skillet, add your eggs (and bacon if you’d like) and scramble
6.) Cut your avocado in half and dice without breaking the skin of the halves and sprinkle on a pinch of coarse salt
7.) Scoop out your avocado and place on your tortillas
8.) Use your spatula, and plate your scrambled egg mixture on your tortillas
