Hope your week has been an awesome one!
Something I’ve been trying to eat more are… brussel sprouts. I always hated them as a kid, but I want to give them a second, third and fourth chance 😉
Ready to try it out with me? Let’s do this!

Happy Thursday! I’m not sure about all of you, but I need a snack between meals (especially in the afternoon). It’s so easy to reach for a bag of tortilla chips, or a candy bar when your blood sugar hits rock bottom.
Something I love snacking on are apple chips. Store bought apple chips usually go for $6 for a small bag… Personally, I don’t want to spend $6 everyday on a small snack, so I of course decided to make them myself.
This is a great snack for kiddos!
Let’s get started!
Wholesome Apple Chips
Makes ~24 apple chips
- 2 Medium Apples (I used the pink lady apple)
- Cinnamon (as desired)
1.) Preheat your oven to 200 degrees F
2.) Wash your apples with a mild dish soap
3.) Using a vegetable peeler or a paring knife to cut out the core of the apple. Discard the core, and cut the apple into thin slices horizontally (so that each piece makes an, “O”).
Note: To make your chips more of a crispy chip texture, try to cut the slices as thin as possible (it’ll help if you have a mandolin) and cook on the longer side of what’s suggested.
4.) Line a baking sheet with foil. Lay out your apple slices on the sheet and sprinkle with cinnamon
5.) Bake for 2 1/2-3 hours
DEVOUR! Happy Snacking!
Happy Tuesday, Ya’ll!
I hope you had a lovely weekend and an awesome Super Bowl Sunday!
This is a delicious recipe was given to me by my mom. She was telling me that this is all she’s been able to eat for the last week, so I thought I may as well try it out.
Let’s get started!

It’s Thursday- in case you forgot ;-)- woot woot!
I have a lovely recipe for cookies that are perfect for any type of day- rainy, sunny, windy, or snowy (for those in the North). This is a twist on the classic chocolate chip cookie that many adore and grandma’s cookies.

I’m quite excited to share this new recipe of a household staple, chicken noodle soup. There are few things better than a big bowl of homemade soup on a cold winter day.
This was a bit of a trial and error and adapting different recipes, but I think this turned out quite delicious.

Happy Monday, Embarquers,
I don’t know about you, but I LOVE mashed potatoes. It must be something to do with my mother with Scandinavian roots making mashed potatoes with butter and chives quite frequently as a child. Now, not having the same metabolism as an 8 year old, I need to be more concerned with nutritional content, yet still be satisfied after finishing a meal. Thankfully my mother decided to start subbing out potatoes for cauliflower when I became older. If any of you have been on the Atkins diet, this is a popular substitution for mashed potatoes.
I Can’t Believe it’s Cauliflower
Here is what you need:
- 2 heads of Cauliflower
- 1 package of Boursin or Alouette spread
- Salt and Pepper (to taste)
- Parmesan (to taste)
